Quinoa stands out for its high nutritional value since it contains carbohydrates and proteins of high biological value that have all the essential amino acids, unsaturated fats, minerals, and vitamins. Also, it provides us with fiber and does not contain gluten, so it can be consumed by celiac patients.
Ingredients:
1 cup quinoa
½ kg chicken
4 eggs
1 bell pepper
6 heads Chinese onion
¼ cup vegetable oil
Ginger, saddle, iodized salt to taste
Preparation:
1. Clean, wash, and soak the quinoa the day before.
2. Parboil the quinoa and remove water from the first boil, replace the water and finish cooking, drain the water and set aside.
3. Wash the eggs and beat them to prepare an omelet.
4. Clean, wash, and chop the chicken and season it with garlic, ginger, and saddle.
5. Fry the seasoned chicken in vegetable oil, add the cooked quinoa, bell pepper, Chinese onion, and omelet. Stir constantly, season with saddle and iodized salt. Serve.
