Chickpeas are rich in slow absorbing carbohydrates (ideal for patients suffering from diabetes). Also, it contains fiber, which helps to feel satiety and avoid constipation.
Its vitamins include folic acid and B vitamins (except for vitamin B12).
It contains different minerals such as potassium, phosphorus, magnesium, calcium, iron, and zinc.
Ingredients:
2 cups cooked chickpeas
3 tbsp tahini (sesame paste)
4 tbsp olive oil
1 garlic clove
Juice of 1 lemon
½ tsp salt
Preparation:
Put the cooked chickpea in the blender until pureed, then add the garlic, olive oil, lemon juice, tahini, and salt. Continue blending to obtain a creamy mixture.
This preparation can be served with fish and rice or quinoa or potato + vegetables of different colors or you can also eat it with vegetable sticks (carrot or celery or pepper) or with toasted pita bread.
